Cakey cookies, yes please

Hockley Valley Spelt Flour has been a client of mine since 2019, and I truly value their mission as a family-run Canadian business dedicated to producing the highest quality, pure spelt flour. For this recipe I wanted to share a delicious cookie filled with melty chocolate and silky shredded coconut flakes. This recipe is dairy free, all the way down to the recommended brand of chocolate, and the suggestion of dunking the cookie into a glass of cold oat milk.
